Hello! Let’s jump right in! The highlight of my week was a cooking class that I took at Cookery Magic. It was such a great experience. We made three dishes: Mee Goreng (fried noodles), Otak Otak (spicy fish pate), and Goreng Pisang (banana fritters). We started with the Otak Otak first. We begun preparing this dish by making the paste we grinded deboned mackerel, turmeric, red chili, galangal, lemongrass, candlenut, garlic, and shallot by pounding it with a mortar and pestle. We then wrapped the paste in bananas leaves and barbequed it! Next, we made the Mee Goreng (fried noodles), it was basically stir-fry. As usually we made the paste first. We finely grinded shallots, garlic, chili, and belachan. Then we prepared the sauce which was comprised of: light and dark soy sauce, oyster sauce, chili sauce, tomato ketchup, 1 tbsp. of water, and black pepper. We then begun the stir-fry by roasting the salt, as it makes the food more flavorful. Next we added sunflower oil and all the ingredients of the paste. We let that cook until for a short while then we added fresh yellow noodles,  mustard greens, cabbage, and bean sprouts. Then we added the sauce and garnished it with fried shallots, spring onion, and limes. Last but not certainly not least, my ultimate favorite the , Goreng Pisang also known as banana fritters. They were very simple and easy to make. Just make the batter which consisted of self raising flour, corn flour, tapico starch, salt, baking powder, water, oil, and ripe bananas. We then cut the bananas straight down the middle producing two halves and we dipped them in the batter. We fried them until they were brown and we topped them with powered sugar and cinnamon. It was SUCCULENT! I had a great time preparing these dishes and I will most definitely prepare them again when I return to the states! Until next time.
